BBQ Ribs
A melt-in-the-mouth fave from Royal Caribbean
Dry Rub Ingredients
- 1 cup brown sugar
- 2 tsp onion powder
- 2 tsp paprika
- 2 tspcoriander
- 2 tsp ground black pepper
- 2 tsp garlic powder
- 1 tsp celery salt
- 1/2 tsp red pepper flakes
- 1/2 tsp cayenne pepper
- 1 tsp kosher salt
Instructions
Put all dry rub ingredients into a bowl and mix well well. Flip the ribs over to the back side. Take a sharp knife from one side and run it all the way down the centre. Use your fingers to get underneath the membrane. Peel back until completely removed. Bring the ribs to room temperature, and generously sprinkle seasoning over the ribs and rub into the meat. Turn the ribs and repeat the sprinkling and rubbing until the meat is completely covered.
Wrap the ribs in tin foil and place in a oven (160c) 1.5 hours, then turn and cook for another 1.5 hours. To get the ribs to "fall of the bone", remove the cooked rubs and place on a foil sheet. Add one chopped white onion around the ribs. Take 1/4 cup of BBQ sauce mixed with 1/4 cup of water and pour over the ribs and evenly baste. Wrap the ribs in foil return to the oven for 1 - 1.5 hours.
To glaze the ribs, remove from the foil and place over medium high heat on the stove. Use your favourite BBQ sauce glaze to glaze the ribs with as little, or as much, sauce as you like to caramelise. Remove after 3-5 minutes. Serve with a delicious salad!
Ricotta Gnocchi
A family favourite by Celebrity Cruises
This signature gnocchi dish from the Tuscan Grille is served with artichokes and cherry tomatoes, but you can adapt it for your family taste - it makes enough for five people. It’s deliciously creamy and pillowysoft gnocchi truly is a thing of beauty. Ricotta is the secret ingredient and for a cruise ship delight this is so quick to make!
Instructions:
- Ricotta
- Parmesan
- Flour
- Eggs
- Salt and pepper
Just mix them together, then use your hands to bring it all together into a soft dough.Roll into ropes then cut into bite size pieces.
Gnocchi is cooked in the same way as pasta – in boiling water - and only takes a minute or two. You will know when gnocchi is cooked because they rise to the surface. Drain. Toss in butter then use the sauce of your choice.
Warm Chocolate Melting Cake
An indulgent dessert from Carnival Cruises
Ingredients
- 3/4 cupdarkchocolate
- 1 1/2 sticks butter
- 3/4 cup sugar
- 4 ea. eggs
- 1/4 cup flour
- 1 tbsp powdered sugar
Instructions
This recipe yields four servings.
Melt the chocolate and butter together. In a separate bowl, mix the eggs and sugar; whisk for a few minutes, then add the flour. Add the egg mixture to the melted chocolate and mix.
Pour the mix into greased individual serving dishes. Bake in the oven for 14 minutes (at around 175c). Enjoy warm with ice cream!

Muddle jalapeño, strawberry and simple syrup. Add ice then top with sparkling water.
